The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 2/12/2020. As a result of that inspection, and due to the severity of the specific violations the Schiano’s Restaurant was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 9 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Turkey gravy, a refrigerated, ready to eat (food prepared inside facility) was date-marked by the facility, but was beyond the 7 day use or sell by date and requires discarding. Person in charge voluntarily discarded food container during time of inspection. *Corrected*
  • Observed chipped/dirt/cracked dish wash unit racks located at main ware wash area.
  • Oxidized food debris located on deep-fry baskets (right side deep fry unit).
  • Observed a bio-film substance located on interior food contact surfaces (surrounding metal ice plate) of interior of facility ice machine.
  • Refuse is not being stored in receptacles or waste handling units that are inaccessible to insects and rodents, as evidence from presence of open can foods stored on ground.
  • Outside waste handling unit had drain plug removed. Leak also observed on unit from port.
  • Observed old food residue located on interior surfaces (in upper and lower corners) and outside surfaces of facility dish wash unit.
  • Observed old litter and dirt accumulations located on flooring below rear food preparation area table.
  • Old food crumbs located on bottom surfaces of grill area 2-door freezer.
  • Observed soiled ingredient containers located in storage area adjacent to dish wash unit.
  • The following areas of facility were observed to have grease accumulations and/or accumulations of static dust: Bottom surfaces of deep fry units, lets and upper inside surfaces of flat-top grill (including legs and wheels), and floors of walk-in cooler.
  • The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evident by the violations observed in this inspection report.
  • Observed tongs/utensils (ladles) stored in an unclean area of facility (on dry ingredient storage rack touching table legs and side wall). *Corrected*
